From handmade pastas to rich, slow simmered sauces, every dish tells a story and delivers a truly authentic experience.”

Commenting on the collaboration, Ms. Fiammetta Maggio Pereira said, “It has been an absolute pleasure working with the team at The Residency Tower. With this, we introduce traditional regional recipes and focus on key techniques for cooking pasta and risotto – simple but essential skills. Dishes like pasta all Norma, seasonal vegetable risotto and Ligurian and Sicilian dishes will be introduced in the kitchen at Carnaby in the weeks to come.”

Fiammetta is a renowned Chennai-based chef specialising in Italian cuisine drawing inspiration from her native which is Sicily – Italy. She is known for her authentic Italian home cooking and has hosted cooking classes and & al fresco lunches at her home.

Highlights of the new signature dishes – Beetroot Carpaccio – an interesting take on beetroot salad with goat cheese, walnuts and balsamic zest … Melanzane Parmigiana – layered eggplant baked with rich tomato sauce, mozzarella, parmesan and herbs. Gnocchi al Pesto di Basilico – soft potato gnocchi tossed in fragrant basil pesto. Pollo alla Cacciatora – Chicken slowly braised in wine, tomatoes and herbs served with creamy polenta to name a few.

The food festival will run through this week and will soon be a part of their menu.
